Roasted Okra

At the Dr. Yum Project, we LOVE roasted veggies of all kinds! Have you ever had roasted okra? If not, give this method a try for a delicious side dish for your meal or a yummy addition to a bowl or salad!

Method

  1. Preheat oven to 400 degrees
  2. Cut off stem end and tip on the okras. Slice each in half lengthwise or cut into small rounds
  3. Toss cut okra with olive oil and salt, and spread out in an even layer on a rimmed baking sheet
  4. Roast at 400 for 12-15 minutes, until well browned stirring around halfway through the cooking time
  5. Once browned, remove from the oven, sprinkle a bit of salt on top before serving
Babyfood Option:

The size small and soft texture of the roasted okra makes this a great dish for older finger-food eaters with a few teeth. Cut larger okra pieces into half or quarters.
